Blueberry-Banana Pancakes 2 c. sifted all purpose flour 1/4 c. sugar 4 tsp. baking powder 1 tsp. salt 2 eggs, well beaten 1-1/2 c. milk 1/4 c. butter, melted 2/3 c. mashed banana 1 tsp. vanilla extract 2 c. fresh blueberries Mix flour, sugar, baking powder and salt. Add eggs, milk, butter, bananas and vanilla. Stir until well blended and smooth. Fold in blueberries. Spoon about 1/4 cup of batter for each pancake on preheated, greased griddle. Turn only once. Yields 6-8.
